Fatty acid content and balance of dietary lipids is a major feature of food quality, from nutrition and health point of view. An adeguate content of LCPUFA and balance between ω-6 and ω-3 series, becomes an important element of distinction for meat.Enrichment of Charolaise heifers (1 year old) unifeed diets with 132 or 160 g of microalgaes (Schizochytrium spp.) administering 27 and 34 g/day of DHA (60 and 75 mg/kg of body weight) for 7 weeks induces: a reduction of dry matter consumption, a decreased of growing rate and slaughtering performances depending on dose of algae used; a significant increase of fatty acids content (C20:5 n-3, C22:5 n-3 and C22:6 n-3) in muscolar tissues, less in subcoutaneous tissues; a clear reduction of the balance ω-6 and ω-3 fatty acids, particularly of muscolar lipids; an improvement of nutritional properties of beef meat from intensive farming, whose quality of structural lipid tissue approaches that of grazing animals.[...]
