In the year 2006 the European Community modified the regulations on protected geographical indications and protected designations of origin (DOP, IGP, STG) in order to update them and to make easier the registration iter for Member States achieving, at the same time, the suggestion of WTO (World Trade Organization) to be more open to non-European Countries. The registration guarantes the geographical origin of a product and, at the same time, the history and culture directly linked to a traditional production of EU; the actual commercial policy is oriented to the knowledge and the preservation, in the international field, of the European gastronomic world from the industrialization and the indiscriminate reproduction.[...]
