The quality and safety of foods are the crucial topic for both food industries and consumers, and their control represents an important objective to be guaranteed. The present Special Issue focuses on the development and application of rapid analytical methods able to identify the main failures in food production and to protect public health. It consists of nine papers, Editorial included, on various food matrices analyzed by fast, cheap and reliable techniques, sometimes alternative to the recognized official methods. The use of quick and easy assays can benefit food business operators for good and reliable monitoring throughout the food chain.
